Simple and Delicious: Ricotta (Sour Cherry Optional) Cheesecake for Shavuot

Your Cheesecake will be fully set for Shavuot Dinner Thursday Night

• 7 eggs
• 1 3/4 cup sugar
• 2lb 4oz ricotta cheese (regular or low-fat OK, drain if very wet)
• 9oz sour cream (regular, low-fat or non-fat OK)
• 3 tbsp custard powder
• 1 1/2 tbsp cornstarch
• 3/4 tspn baking powder
• 2 tbspn vegetable oil
• zest of 1 lemon
• 1 1/2 cups – 2 cups drained pitted sour cherries (from jar, optional)
• Oil spray or oil for tin

• 11″ springform cake tin or 9 1/2″ square cake tin
• Electric Mixer with mix (or hand mixer with whisk, or just a whisk)
• Spatula
• Oven, oven mitts
